2 6 oz Salmon fillets
4 Tbs Olive oil
2 Tbs Butter
1 Tbs Chopped fresh chives and tarragon

Season the salmon fillets with salt and ground black pepper.
Heat the olive oil in a non-stick frying pan until shimmering and add the salmon fillets, skin side down. Fry over a medium high heat until edges begin to lighten in color. Then turn over and continue to cook for 3-4 minutes until the fles side is nicely browned. Turn off the heat, remove the pan from the burner, and remove the salmon from the pan. Place it on a platter.
Add the remaining butter to the pan. When melted from the latent heat of the pan, add the herbs and stir briefly.
Pour the olive oil-butter-herb mixture over the salmon and serve.
Serving suggestion: New potatoes and a wedge of lemon.
